Saffron Potato Salad

This bright, herb-packed potato salad is a lighter take on the classic. Instead of a heavy mayonnaise dressing, warm potatoes are tossed with saffron-infused olive oil, fresh herbs, lemon, and crunchy baby dill pickles for the perfect summer side dish.

Serves 4–6 | Serve slightly warm or chilled.

Ingredients:

For the Salad

  • 2 lbs baby potatoes, halved if large
  • ½ cup baby dill pickles, finely chopped
  • 2 tbsp pickle brine
  • 1 small shallot, finely diced
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped
  • 2 green onions, thinly sliced

For the Saffron Dressing

  • ⅓ cup extra virgin olive oil
  • Juice of 1 lemon
  • Generous pinch Saffron Threads, ground to powder with a mortar and pestle
  • 1 tsp Dijon mustard
  • 1 tsp sea salt
  • Freshly cracked black pepper

Saffron Threads

Saffron in its most pure raw form. Great for infusions, tea, and cooking.

Directions:

  1. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork-tender, about 12–15 minutes. Drain and let cool slightly.
  2. While the potatoes cook, whisk together the olive oil, lemon juice, saffron, Dijon, salt, and pepper.
  3. Add the warm potatoes to a large bowl and toss with the dressing so they absorb all of the flavor.
  4. Add the chopped baby dill pickles, pickle brine, shallot, dill, parsley, and green onions. Toss gently to combine.
  5. Taste and adjust with additional lemon juice, salt, or pickle brine as desired.
  6. Let sit for at least 15 minutes before serving to allow the flavors to meld.
