Whipped Feta with Saffron Barberries & Grilled Bread

Barberries, known as zereshk in Persian, are a staple in Iranian cooking and one of my favorite ingredients to work with. These tiny ruby-colored berries have a bright, tart flavor that adds incredible depth to both sweet and savory dishes. Barberries are naturally rich in vitamin C and contain berberine, a plant compound that has been studied for its potential benefits related to metabolic health and inflammation. In this recipe, they're paired with creamy whipped feta, saffron, and grilled bread for a simple appetizer that feels both elevated and deeply rooted in Persian tradition.

Serves 4–6

Ingredients:

For the Whipped Feta

  • 8 oz feta
  • 3 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • 1–2 tbsp warm water, as needed

For the Saffron Barberries

  • ½ cup dried barberries (zereshk)
  • 1 tbsp olive oil or butter
  • 1 tsp Saffron Latte Powder
  • 1 tbsp honey or maple syrup (optional)

For Serving

  • Grilled sourdough or warm crusty bread
  • Lemon zest
  • Extra virgin olive oil for drizzling
  • Chopped pistachios (optional)
  • Fresh mint leaves (optional)

Saffron Latte 30-Day Supply

Instructions:

  1. Add the feta, olive oil, lemon juice, and 1 tablespoon warm water to a food processor. Blend until smooth and creamy, adding another tablespoon of water if needed. Spread onto a serving plate or shallow bowl.
  2. Place the barberries in a bowl and cover with water. Swish them around with your hands to remove any dust or debris, then drain. Repeat this process 2–3 times until the water runs clear.
  3. After the final rinse, allow the barberries to drain well.
  4. Heat the olive oil or butter in a small skillet over low heat. Add the barberries, Saffron Latte Powder, and honey or maple syrup if using. Cook gently for 2–3 minutes, stirring frequently, just until the barberries soften and become glossy. Be careful not to overcook them.
  5. Spoon the warm saffron barberries over the whipped feta.
  6. Finish with lemon zest, a drizzle of olive oil, and pistachios/ mint, if desired.
  7. Serve immediately with grilled sourdough or warm crusty bread.
