Saffron Rice Paper Mochi

Soft, chewy rice paper wrapped around creamy saffron yogurt and fresh fruit. A simple, naturally sweet bite made with a daily dose of saffron.
Ingredients:
- 4 sheets rice paper
- 1 tbsp Saffron Latte Powder
- 1 cup Greek yogurt
- 2 tbsp honey or maple syrup
- Chopped papaya
- Rice flour, for coating

Instructions:
- Prepare the filling: In a bowl, combine the Saffron Latte Powder and honey or maple syrup with the yogurt. Stir until smooth and set aside.
- Soften the rice paper: Dip each sheet of rice paper in water until softened and pliable. Place on a clean, flat surface.
- Add the filling: Spoon approximately 2 tablespoons of chopped papaya into the center of the rice paper. Top with ¼ cup of the saffron yogurt mixture.
- Fold: Carefully fold the edges of the rice paper over the filling, fully enclosing it.
- Repeat with the remaining rice paper and filling.
- Coat: Lightly coat each mochi in rice flour to prevent sticking.
- Freeze: Place in the freezer for at least 2 hours, or until firm then enjoy!
