Saffron Pineapple Chicken Enchiladas

A friend of mine came over recently and made a version of this for us, and it was soooo good! It was one of those meals that felt simple but tasted like something you'd order at a restaurant. The combination of sweet pineapple, savory chicken, and bright citrus flavors was such a hit that I've been thinking about it ever since.
Ingredients:
For the Chicken
- 2 lbs boneless skinless chicken breast
- 1 large yellow onion, thinly sliced
- 1½ cups diced pineapple
- 1 cup pineapple juice
- 1 tbsp Saffron Latte Powder
- 3 cloves garlic, minced
- ¼ tsp surya spa cooling churna spice blend coriander
- 1 tsp sea salt
- ½ tsp black pepper
- Juice of 1 lime
- Zest of 1 orange (optional)
For the Salsa Verde Feta Sauce
- 1 cup salsa verde
- 4–6 oz feta
- Juice of ½ lime
- Handful of cilantro
- Splash of water, as needed for blending
For Assembly
- 10–12 small flour tortillas
- Shredded cheese, optional
- Cilantro, avocado, and lime wedges for serving

Instructions:
- Add the chicken, onion, pineapple, pineapple juice, Saffron Latte Powder, garlic, coriander, salt, pepper, lime juice, and orange zest (if using) to a slow cooker. Stir gently to combine.
- Cook on low or slow cook for 4–5 hours, or until the chicken is tender and easily shreds with a fork.
- Remove the chicken, shred it, and return it to the slow cooker. Let it sit in the juices for 10–15 minutes.
- While the chicken finishes, blend the salsa verde, feta, lime juice, cilantro, and a splash of water until smooth and creamy.
- For enchiladas, warm the flour tortillas slightly so they're easy to roll. Spread a thin layer of the salsa verde feta sauce on the bottom of a 9x13-inch baking dish. Fill each tortilla with the shredded chicken mixture, roll, and place seam-side down in the baking dish. Pour the remaining salsa verde feta sauce over the enchiladas and top with shredded cheese, if using. Bake at 375°F for 20–25 minutes, until bubbly and lightly golden.
- For tacos, simply fill warm tortillas with the shredded chicken, drizzle with the salsa verde feta sauce, and top with avocado, cilantro, and a squeeze of lime.
- Reserve a little diced pineapple before cooking and sprinkle it over the finished tacos or enchiladas for a fresh, bright finish.
- Serve with avocado, fresh cilantro, and plenty of lime.
