Rooted in Ayurvedic balance and Mediterranean simplicity, these saffron lentil patties are a grounding and functional way to bring plant-based protein into your week. With Kinder Thoughts capsules woven in, they’re not just flavorful—they also support emotional clarity and cognitive ease. 

Serves: 6

Ingredients:

  • 1½ cups cooked lentils

  • ½ cup breadcrumbs (or make your own by blending sourdough croutons)

  • ¼ cup chopped parsley

  • 2 garlic cloves, minced

  • 1 shallot, minced

  • Zest of 1 lemon

  • 6 Kinder Thoughts capsules (opened)

  • Sea salt to taste

  • Ghee for cooking

Instructions:

  1. Combine all ingredients in a mixing bowl and mash gently until the mixture holds together.

  2. Form into 6 small patties.

  3. To Pan-Fry: Heat olive oil in a skillet and cook patties for ~3 minutes per side, until golden.

    To Bake: Place on a parchment-lined tray and bake at 400°F for 20–25 minutes, flipping halfway.
