Saffron Lentil Patties

Ingredients:

1½ cups cooked lentils

½ cup breadcrumbs (or make your own by blending sourdough croutons)

¼ cup chopped parsley

2 garlic cloves, minced

1 shallot, minced

Zest of 1 lemon

Sea salt to taste

Ghee for cooking
Instructions:

Combine all ingredients in a mixing bowl and mash gently until the mixture holds together.

Form into 6 small patties.

To Pan-Fry: Heat olive oil in a skillet and cook patties for ~3 minutes per side, until golden.
To Bake: Place on a parchment-lined tray and bake at 400°F for 20–25 minutes, flipping halfway.
