Saffron Shortbread Cookies with Matcha Frosting Recipe

Ingredients for the Saffron Shortbread Dough:

  • 2 cups Jovial Einkorn Flour

  • 1 cup unsalted butter (or coconut oil for a dairy-free option), softened

  • ½ cup powdered coconut sugar (or blend coconut sugar to make it powdered)

  • ¼ teaspoon vanilla extract

  • ¼ teaspoon salt

  • 1 splash warm water (to activate the saffron latte powder)

Ingredients for the Matcha Frosting:

  • 1 cup cream of choice 

  • 1 tsp matcha powder

  • Add vanilla bean (optional for taste)

Assembly:

Step 1: Prepare the Saffron Shortbread Dough

  1. Activate the saffron latte powder: In a small bowl, dissolve the 4 tablespoons of Warm Feelings® saffron latte powder into a splash of warm water. Let it sit for a few minutes to release the flavor and color.

  2. Cream the butter and sweetener: In a large mixing bowl, beat the softened butter and powdered coconut sugar together until light and fluffy (about 2-3 minutes).

  3. Add the saffron mixture: Stir in the activated saffron latte powder mixture into the butter-sugar mixture until evenly combined.

  4. Mix dry ingredients: In a separate bowl, whisk together the Jovial Einkorn Flour and salt.

  5. Combine the dough: Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together. If the dough feels too dry, add a small splash of water (1 teaspoon at a time) until it reaches a soft, workable consistency.

  6. Chill the dough: Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  7. Roll out and cut: Preheat your oven to 350°F (175°C). Roll the dough on a lightly floured surface (using more Einkorn flour) to about 1/4-inch thickness. Cut into your desired shapes.

  8. Bake: Place the cookies on a parchment-lined baking sheet and bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool completely on a wire rack.

Step 2: Prepare the Matcha Coconut Frosting

  1. Whisk the cream and matcha: In a mixing bowl, combine the chilled cream and matcha powder.Mix until smooth and fully incorporated. You can add vanilla bean for extra flavor. 

  2. Taste and adjust: Taste the frosting and adjust the sweetness if needed.

  3. Frost the cookies: Once the cookies have completely cooled, spread a thin, smooth layer of frosting onto each one.

This recipe should make about 18-24 cookies depending on the size!
