Ingredients:

For the Cake:

2 cups einkorn flour (finely ground)

1/2 tsp baking soda

1/4 tsp salt

1/2 cup grass-fed butter (melted)

1/2 cup maple syrup (or honey)

3 large eggs (room temperature)

1 tsp vanilla extract
-
1/2 cup full-fat coconut milk (or almond milk)

1 tbsp fresh lemon zest (for a hint of brightness)

1/2 tsp ground cardamom (optional, to complement the saffron)

3 Tbsp of The Fullest® Saffron Latte powder
For the Clean Saffron Glaze:

2-3 tbsp maple syrup (or honey)

1-2 tbsp coconut milk (or milk of your choice)

1-2 tsp arrowroot powder (to thicken) or coconut flour (optional)

Assembly:

Prepare the Cake Batter:

Preheat your oven to 350°F (175°C). Grease your cupcake pan with butter and lightly dust with einkorn flour.

In a medium bowl, whisk together the einkorn flour, baking soda, salt, and cardamom (if using).

In a large mixing bowl, whisk the melted butter, maple syrup, and 3 tbsp of The Fullest® Saffron Latte powder

Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract, lemon zest, and coconut milk.

Gradually add the dry ingredients to the wet ingredients, stirring until fully combined. The batter will be thicker than usual due to the einkorn flour.

Bake the Cake:

Pour the batter into the prepared cupcake pan, spreading it evenly.

Bake for 25-28 minutes, or until a toothpick inserted into the center of the cake comes out clean. Since einkorn flour makes a denser texture, it may take a bit longer to bake.

Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Make the Clean Saffron Glaze:

In a small bowl, whisk together the maple syrup (or honey) and coconut milk.

Stir in 1 tbsp of The Fullest® Saffron Latte powder
to get that golden color and fragrant flavor.

If you want the glaze to be thicker, whisk in 1-2 tsp of arrowroot powder or coconut flour. Adjust to your desired consistency.

Continue mixing until smooth and well-combined.
