Ingredients:
Assembly:
- Preheat oven to 350°F
- Prepare muffin trays with a thin coat of cooking spray
- In a mixing bowl, mix the coconut flour with coconut sugar
- Add in the saffron latte powder, cardamom, tocos, pine pollen, turkey tale, lion’s mane, cordyceps, chaga, and the ceremonial cacao
- Mix in the vegan egg replacer well until it becomes puffy & soft in consistency
- Shape the piping bag into the muffin trays as desired
- Bake in the oven till golden (about 30 minutes)
- Remove from oven and garnish with raw pistachio slices & finish with a touch of 24K edible gold
- Let it cool down for about 30 minutes and indulge
Vegan Egg Replacement:
For a vegan egg replacer, you can use one of the following options:
- Flaxseed Meal: Mix 1 tablespoon of ground flaxseed with 3 tablespoons of water to replace 1 egg. Let it sit for a few minutes to thicken.
- Chia Seeds: Similar to flax, mix 1 tablespoon of chia seeds with 3 tablespoons of water and let it gel.
- Applesauce: Use ¼ cup of unsweetened applesauce for each egg, which works great in baked goods.
- Mashed Banana: ¼ cup of mashed banana can substitute for an egg, adding moisture and sweetness.
- Aquafaba: The liquid from a can of chickpeas can replace egg whites. Use 3 tablespoons per egg.
Each of these will affect the texture differently, so you can experiment to find your favorite one.
