A mood-brightening take on a persian classic, Kookoo Sabzi
As the season shifts and spring herbs come into abundance, this vibrant take on the classic Persian Kookoo Sabzi invites both nourishment and intention to the table, this herb-forward frittata symbolizes rebirth, fresh energy, and connection to the earth.
In this elevated version, we’ve added soaked barberries for a tangy brightness and walnuts for grounding omega-3s and texture. Paired with creamy coconut yogurt and a drizzle of olive oil or sumac, it’s a dish that feels both deeply traditional and perfectly aligned with our modern wellness rituals.
