This saffron coconut salmon is not your average fish dish! It's seasoned with some classic herbs and spiked with our Warm Feelings® saffron latte — so it has a bit of a creamy coconut flavor and saffron twist! It pairs well over steamed rice or alongside a hearty pile of greens. 

While saffron is always a good idea to consume anytime (especially for its mood-boosting benefits), it’s even more beneficial when incorporated into a meal as it improves digestion and promotes satiety, making it a wholesome culinary experience!

Saffron Coconut Salmon Ingredients

Coconut Saffron Salmon Assembly

  1. In a medium saucepan, add 1 tablespoon of oil for the sauce.
  2. Add the shallot and cook for 3 minutes, stirring often. Add the garlic and ginger and cook for 1 more minute.
  3. Add the Warm Feelings® saffron latte, coconut milk, and spinach. Bring to a boil, then reduce heat to low and let simmer for around 8 minutes, stirring occasionally. Squeeze in the juice of half a lime. Turn off the heat while you prepare the fish.
  4. Warm another pan with another tablespoon of oil over medium-low heat. Season the salmon with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up, in the pan. Cook until golden, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch, about 4 minutes more, depending on the thickness.
  5. Plate your salmon over steamed rice or greens. Spoon sauce over the salmon filets and garnish with cilantro. Serve warm. (Reserve leftover sauce for later use.)
