This saffron coconut salmon is not your average fish dish! It's seasoned with some classic herbs and spiked with our Warm Feelings® saffron latte — so it has a bit of a creamy coconut flavor and saffron twist! It pairs well over steamed rice or alongside a hearty pile of greens.
While saffron is always a good idea to consume anytime (especially for its mood-boosting benefits), it’s even more beneficial when incorporated into a meal as it improves digestion and promotes satiety, making it a wholesome culinary experience!
Saffron Coconut Salmon Ingredients
Coconut Saffron Salmon Assembly
- In a medium saucepan, add 1 tablespoon of oil for the sauce.
- Add the shallot and cook for 3 minutes, stirring often. Add the garlic and ginger and cook for 1 more minute.
- Add the Warm Feelings® saffron latte, coconut milk, and spinach. Bring to a boil, then reduce heat to low and let simmer for around 8 minutes, stirring occasionally. Squeeze in the juice of half a lime. Turn off the heat while you prepare the fish.
- Warm another pan with another tablespoon of oil over medium-low heat. Season the salmon with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up, in the pan. Cook until golden, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch, about 4 minutes more, depending on the thickness.
- Plate your salmon over steamed rice or greens. Spoon sauce over the salmon filets and garnish with cilantro. Serve warm. (Reserve leftover sauce for later use.)
