Chocolate is our love language and one of our favorite treats is this low-glycemic Saffron & Sesame Chocolate Bark Recipe. Enhanced with saffron to uplift your mood and boost your libido, this bark recipe is rich in flavor, packed with medicinal benefits, and the perfect treat to enjoy with your loved ones this Valentine’s Day!

Ingredients:

  • 5 (small) bars 100% unsweetened dark chocolate

  • 3 tablespoons (or 3 sachets) of Warm Feelings® saffron latte

  • ¼ cup organic sesame seeds (toasted, for extra flavor)

  • ½ cup organic sprouted walnuts (chopped for added crunch)

  • ¼ cup date syrup or maple syrup (adjust to taste for sweetness)

  • A pinch of sea salt

  • A sprinkle of cinnamon or cardamom (optional)  

Assembly:

  1. Prepare the Ingredients: Toast the sesame seeds (if not already toasted): In a dry skillet over medium heat, toast the sesame seeds for about 3-4 minutes until golden brown. Stir often to avoid burning. Once done, set aside. Chop the sprouted walnuts into small pieces to ensure they’ll spread evenly throughout the bark.

  2. Melt the Chocolate: Break the tempered dark chocolate bar into smaller pieces. Melt the chocolate. Since your chocolate bar should already be tempered, it should stay smooth and glossy when melted.

  3. Mix in the Warm Feelings® saffron latte and sweetener:Once the chocolate is melted, whisk in the Warm Feelings® saffron latte powder until fully incorporated. This will give the bark its rich, creamy and softly spiced flavor. Stir in your sweetener of choice. (If you're using date syrup, add it in gradually and stir well to ensure it's evenly mixed into the melted chocolate. If using maple syrup, adjust the amount depending on how sweet you want it.)

  4. Add the Mix-ins:Stir the chopped sprouted walnuts and toasted sesame seeds into the melted chocolate, making sure they are evenly distributed throughout the mixture.

  5. Pour and Set:Line a baking sheet with parchment paper to prevent the bark from sticking. Pour the chocolate mixture onto the parchment paper and spread it out with a spatula to your desired thickness. If desired, sprinkle a small pinch of sea salt over the top, or a dash of cinnamon or cardamom for extra spice.

  6. Freeze to Set: Place the baking sheet in the freezer for about 30-45 minutes, or until the bark is fully set and firm to the touch.

  7. Break Into Pieces: Once the bark is set, remove it from the freezer and break it into irregular pieces, either by hand or with a knife if you want more control over the size of the pieces.

  8. Store:Store in the freezer if you want to keep the bark fresh for longer, or at room temperature for short-term storage (for a few hours). The bark will remain solid at room temperature if eaten soon after making it, but should be kept cold if stored for longer.
