This vibrant couscous salad is a golden ode to summer — sweet apricots, sprouted pistachios, and fresh herbs tossed in a saffron-steeped base. It’s simple, nourishing, and ideal for warm days when your nervous system craves ease.

Ingredients:

  • 1½ cups couscous

  • 2 tbsp Warm Feelings saffron latte powder

  • ¼ cup chopped dried apricots

  • ¼ cup toasted or sprouted pistachios

  • 3 green onions, sliced

  • Handful of fresh mint, chopped

  • Juice of 1 lemon

  • 2 tbsp olive oil

  • Sea salt to taste

Instructions:

  1. Bring water to boil and stir in Warm Feelings powder. Pour over couscous, cover, and let sit for 5 minutes.

  2. Fluff with a fork and mix in apricots, pistachios, green onions, and mint.

  3. Drizzle with lemon juice and olive oil.
