Plated saffron beef meatballs made with Kinder Thoughts capsules, garnished and ready to serve.

Soft, savory, and secretly therapeutic—these saffron-infused meatballs turn a weeknight staple into a mood-boosting meal. With a therapeutic dose of Kinder Thoughts saffron capsules and wholesome ingredients like grass-fed beef and einkorn flour, they’re as nourishing for the nervous system as they are delicious for the taste buds. Perfect for little hands (and grown-up cravings), this recipe proves comfort food can double as everyday wellness.

Ingredients:

  • 1 lb organic grass fed ground beef

  • 1 cage free egg

  • ¼ cup einkorn flour

  • 2 tablespoons finely grated onion

  • 3 Kinder Thoughts capsules (open and pour in)

  • 1 tsp sea salt

  • Optional: 1 tbsp olive oil for added moisture

Instructions:

  1. Preheat oven to 375°F.

  2. In a large bowl, combine ground meat, egg, breadcrumbs, grated onion, saffron capsule, salt and olive oil.

  3. Mix well until combined. Roll into small, kid-sized meatballs.

  4. Place on a parchment-lined baking sheet.

  5. Bake for 15–20 minutes until golden and fully cooked.

Tip: Freeze a batch for easy lunchbox protein or serve them fresh from the oven with your favorite sides.
