Ingredients (Serves 4–6):

  • 2 lbs Yukon Gold potatoes (or a mix of Yukon and sweet potatoes for depth)
  • ½ cup ghee (or unsalted butter for a more traditional version)
  • ½ cup warm milk (almond, oat, or dairy)
  • Pinch of Saffron Threads (about 10–12)
  • 3 garlic cloves, roasted
  • Sea salt and black pepper to taste
  • Optional: Chopped chives for garnish

Saffron Threads

Instructions

1 Infuse the Saffron

Warm the milk in a small saucepan. Add Saffron Threads and let steep for 10 minutes while you prepare the potatoes.

2 Cook the Potatoes

Peel and chop potatoes. Boil in salted water until fork-tender (about 15–20 minutes). Drain well.

3 Mash & Blend

Mash potatoes with roasted garlic and ghee. Slowly add saffron-infused milk while mashing until smooth and creamy.

4 Season & Serve

Add sea salt and pepper to taste. Garnish with chives and an extra drizzle of ghee for a golden finish.
