Ingredients (Serves 4–6):

2 lbs Yukon Gold potatoes (or a mix of Yukon and sweet potatoes for depth)

½ cup ghee (or unsalted butter for a more traditional version)

½ cup warm milk (almond, oat, or dairy)

Pinch of saffron threads (about 10–12)

3 garlic cloves, roasted

Instructions:

Infuse the Saffron: Warm the milk in a small saucepan. Add saffron threadsand let steep for 10 minutes while you prepare the potatoes.

Cook the Potatoes: Peel and chop potatoes. Boil in salted water until fork-tender (about 15–20 minutes). Drain well.

Mash & Blend: Mash potatoes with roasted garlic and ghee. Slowly add saffron-infused milk while mashing until smooth and creamy.
