Fall is just about here, but our obsession with summer popsicles remains. Because the weather is still gorgeous and sunny here in California, we thought it best to maintain those summer vibes as long as possible with this recipe colab.
We’re paying homage to fall with warm, inviting undertones from saffron and date syrup, while adding a touch of lime for a little summertime zest. Coconut provides some bulk to these popsicles, making them a perfect seasonal transition.
SAFFRON, DATE, & LIME POPSICLES INGREDIENTS
1 16 oz BPA-free can of full-fat organic, unsweetened coconut milk
2½ tsp Just Date Syrup
Zest of ½ a small organic lime, plus fresh lime juice to taste
Pinch of pink Himalayan salt

1 | Pour all ingredients into a blender and mix until evenly combined. If you don’t have a blender, simply pour all ingredients into a large bowl or container with a spout and whisk to evenly combine ingredients, until smooth.
2 | Pour mixture into 6 popsicle molds, freeze, and devour!
