Sweet Potato Oatmeal Cookie

Looking for a sweet treat without the inevitable sugar crash? These cookies get their sweetness from sweet potatoes, which, along with old-fashioned oats, gives you a big hit of plant-based protein and healthy fiber to keep you feeling full and satisfied. With dried cranberries, coconut, walnuts, and pumpkin pie spice, they’re also chewy, crunchy, and absolutely delicious.

And, just in case you needed even more reasons to love them, Vitamins A and C, antioxidants, and omega-3s make them a true nutritional powerhouse.
