Raspberry Chocolate Truffles

Nothing says Valentine’s Day like chocolate truffles. But when those off-the-shelf, discounted and preservative-laden Valentine’s sweets don’t quite fit in with your health care regimen, these truffles are a healthy alternative to show your loved ones you truly care about them (and their health).

Super easy to make, the heart of these truffles contain a clean, vegan, paleo spread made of cacao, hazelnuts, and coconut sugar milled together to create a pure, thick butter.

And, as an added bonus, chocolate’s role as an aphrodisiac along with the addition of energy and libido increasing superfoods like goji berries, makes this treat truly perfect for the romantic day.

RASPBERRY CHOCOLATE TRUFFLES INGREDIENTS

1½ cup Dates

¼ cup HELLA Hazelnut Spread

3 tablespoons Raw Cacao Powder

⅛ teaspoon Sea Salt

Freaky Health Energy Chocolate Bar

¼ cup Raspberries, freeze-dried

¼ cup Goji Berries

RASPBERRY CHOCOLATE TRUFFLES INGREDIENTS

1 | Blitz the dates, hazelnut spread, cacao powder, and sea salt into a blender or food processor until well incorporated.

2 | Roll into tablespoon-sized balls and place on a baking sheet lined with parchment paper. Set aside.

3 | Chop up the chocolate bar and melt in a small double boiler over low heat.

4 | Using a fork, dip each truffle in the melted chocolate, letting excess drip off. Set aside.

5 | Blitz freeze-dried raspberries and goji berries into small granules.

6 | Sprinkle truffles with a dusting of your raspberry and goji berry mixture.

7 | Place inside the fridge for at least 1 hour (if you can resist).

*Makes 6 truffles.
