We love the radish. If the color alone isn’t reason enough to swoon, think summertime, rosé, and the south of France. Craving radishes yet? As with most things tasteful, the French really get it right by celebrating the radish in its whole form. Radishes served with fresh butter and crusty bread are perhaps one of the most modestly elegant and simple snacks.The crisp and peppery flavor of summer radishes are the perfect way to start a meal as they cleanse the palate and get digestion going- yet, barely dent the appetite.
We have upgraded this dish by using ghee instead of butter. Among the many health benefits of ghee, it should be noted that within Ayurveda, ghee is considered one of the most sattvic foods. Sattvic foods promote positivity, growth, and expansion of consciousness. Ghee is also said to have the ability to remove negative emotions from our bodies. Oh how magical!
You could most certainly serve this dish with your favorite bread, but we used this as an opportunity to feature a deliciously simple buckwheat cracker.
| Buckwheat Cracker Recipe |
2 cups buckwheat flour
1/4 melted ghee or coconut oil
1 teaspoon sea salt
1/2 cup water
¼ cup sesame seeds
¼ cup flax seeds
Flake Salt (optional)
| Instructions |
1) Mix the buckwheat flour with oil, sea salt, and half of the water. Add more water as needed to be able to form the dough. You want the dough to be firm, but not so dry that it will crack.
2) Roll the dough out thinly on a parchment paper or a silpat baking mat. Evenly distribute sesame and hemp seeds over the top of the dough, press in lightly so that the seeds don’t fall off. If desired, garnish with extra flake salt.
3) Score the dough into shapes of your choice. (We cut them into rectangles).
4) Bake in the oven at 350 for 10-15 minutes. Be careful not to burn the crackers as they become crisp very quickly.
Makes approximately 2-3 dozen crackers

As you wish! Serve radishes whole with a side of ghee and high quality flake sea salt (Maldon is excellent for this dish) or get a bit more creative like us, by smearing a bit of ghee on crackers and topping with thinly sliced radishes, sea salt, and micro greens.
Best consumed with abundant company, good vibes, and a delicate rosé wine.
