Summer Salad + Poppy & Seed Vinaigrette

Nothing embodies the essence of summer like salad. Sure, many of us consume salad year round – but the feeling that you get from eating fresh baby greens and lettuces that have just popped their heads out of the dirt is like no other. In summer we have the opportunity to look at our lives and our plates with fresh eyes- summer is the opportunity to let the garden be your guide and get creative!

 

We wouldn’t be Poppy and Seed without offering up a delicious Poppy Seed Dressing. And if you didn’t know- poppy seeds are actually an excellent source of vitamins and minerals- namely zinc, calcium and iron.

Spring Salad: Pink

| Ingredients |

½ avocado

2 tablespoons apple cider vinegar

2 tablespoons coconut oil

2-4 tablespoons water

1 date or a few drops liquid stevia

¼ teaspoon sea salt

2 teaspoons poppy seeds

 

| Directions | Blend all ingredients except poppy seeds until smooth. Stir in poppy seeds.

Makes approximately 1 cup dressing

 

| Serve | with your favorite fresh greens, herbs and fruit. We particularly love this dressing with a strawberry salad !
